Salted Pistachio Chocolate Chip Cookies

Days off are the best. On a day off you plan to sleep in, but end up watching Boy Meets World re-runs. You go out to lunch. You listen to podcasts. You color on printable coloring pages. You make cookies. Salty, chocolatey, and super rich cookies.

These cookies are powered by dark chocolate chunks and salty pistachios. They are sprinkled with pink Himalayan salt after being placed onto the baking sheet. As they bake, they spread out into an ooey-gooey consistency that still holds its form. Just what you want from a cookie.

Did I also mention that you spend your day off with the ones you love the most?

In my case, it is this girl. Such a cooperator when I make her sit outside while I’m taking photos.

Bake these cookies. Tower these cookies. Eat these cookies. If you are feeling generous, send them in a gift package with a little love note to someone who goes head-over-heels for pistachios. It will make their day! Because who doesn’t love homemade cookies?

NOTE* – The only change made to the recipe was that I topped them with Pink Himalayan Salt because I did not have the Smoked Salt available! This recipe is divine!
