Almond Mascarpone Baked Donuts

Almond Baked Cake Donuts

makes 12 baked donuts

recipe adapted from recipe on back of the Wilton donut pan package

2 cups cake flour

1/2 cup granulated sugar

2 tsp baking powder

1/4 tsp ground nutmeg

1 tsp salt

3/4 cup buttermilk

2 eggs

2 tbsp butter, melted

1 tsp pure vanilla extract

1 tsp pure almond extract

1/4 cup almond paste

Preheat oven to 425 degrees. Grease two doughnut pans with a cooking spray.

In a large mixing bowl, sift together cake flour, sugar, baking powder, nutmeg and salt. Add buttermilk, extracts, eggs and butter. Add the almond paste and beat until no more clumps are present. Fill each doughnut cup approx. 2/3 full.

Bake 7-9 minutes or until the top of the doughnuts spring back when touched.
Let cool in pan for 4-5 minutes before removing and glazing.
Mascarpone Glaze

for the glaze, I replaced the cream cheese with mascarpone glaze and followed he same directions as followed in this recipe.

Glaze all 12 doughnuts and sprinkle with cinnamon sugar. Enjoy!
