Salty Vanilla Bean Dark Chocolate Chip Cookies

recipe adapted from Joy the Baker

makes 18 cookies

1 stick unsalted butter, sofetened

1/2 cup granulated sugar

1/2 cup packed brown sugar

1 egg

1/2 vanilla bean, scraped + 1 tsp vanilla extract

1 1/4 cup AP flour

1/2 tsp baking soda

1/4 tsp salt

1 cup dark chocolate chips

coarse salt for sprinkling

Preheat oven to 300 degrees F. Line two baking sheets with parchment paper.

Beat butter and sugars until creamed, 3-4 minutes. Add egg and beat until combined. Mix in the vanilla bean and extract.

In a separate bowl, combine the dry ingredients and whisk together. Add all at once to the dough and mix on low until combined. Fold in chocolate chips.

Scoop out 2 tbsp of dough per ball. Set on cookie sheets. Sprinkles each dough ball with coarse salt.

Bake 15-20 minutes or until slightly golden brown. Let cool on cookie sheets then transfer to a wire rack to complete cooling process.
