Broccoli Potato Nuggets

All people like cookies. They like apple crisp. Of course they will eat pie. Besides sweet baked goods, they also enjoy the savory ones. Just like these vegetable potato nuggets. Crispy on the outside, with a mashed potato consistency on the inside. These are perfect for lunch, dinner, or just plain snacking. And the best part? Not only will you enjoy them but feel good about eating them!


Roasted carrots and broccoli are combined with sauteed leeks and garlic. The best combination of flavors.


Add mixture to the food processor. Once combined, you will puree baked potatoes.


Mashed potatoes, pureed vegetables, seasoning, and mustard are all combined to make our “dough.”


When the mix is formed into balls, we roll them in flour, egg, and Italian breadcrumbs.


Once they are coated, you freeze them. Once frozen they are ready to bake whenever you want. Enjoy!
